Instructions
Preheat the oven to 400F. Lay the bacon on a sheet pan (I recommend lining it with foil or parchment paper for easy cleanup) and bake for 10 minutes, so it starts cooking but is still bendable.
While the bacon is cooking boil a pot of water and blanch the green beans. Once the water is boiling put the green beans in and cook for 3 minutes. Immediately dump the water and rinse with cold water to cool.
Trim any long stringy ends off of the green beans either before or after blanching.
Green Bean Seasoning
Combine the brown sugar, garlic, and black pepper. Pour in the bacon grease from the partially cooked bacon pan and mix to combine. It should for a grainy paste. Set aside until bundles are made.
Bundle Wrapping
Once the bacon is partially cooked make your green bean bundles by taking about 7-10 green beans in a bunch and wrapping them with a slice of partially cooked bacon. I like to start at the bottom of the bunch and wrap the bacon around, slightly overlapping it on itself so it stays wrapped.
Place the bacon wrapped bunch with the free bacon end side down on the sheet pan you used to cook the bacon. Repeat until you are out of green beans. (I typically have a couple slices of bacon left over)
Once all of your bundles are wrapped, divide the seasoning mixture amongst all of the bundles. Put a spoonful on each and spread it across the top. It will be clumpy and delicious.
Bake at 400F for 20 minutes or until the bacon and green beans are at the desired doneness.
