  1. Cook the chorizo in a frying pan on medium-high heat, breaking up into crumbles as it cooks with your spatula.
  2. While the chorizo is cooking combine your eggs, milk, and black pepper in a mixing bowl and scramble the eggs. Remove the cooked chorizo from the pan, leaving about 2 tablespoons of the grease behind to cook the eggs in.
  3. Pour the eggs into the dirty pan and scramble, cook until eggs are no longer runny.
  4. While eggs are cooking cover tortillas with a wet paper towel and microwave for 20-30 seconds or until warm.
  5. Fill warm tortillas with chorizo, eggs, and cheese. Garnish with hot peppers or hot sauce if desired.
Recipe Notes

If I’ve got peppers and onions on hand at home I will also pan fry 1/2 a pepper and 1/4 an onion, both chopped into pieces, and add those to the tacos as well, however that was not added to the tacos pictured.
