Cheesy chicken taquitos are a tasty homemade treat that has a hint of spice and hot, melty cheese. For less than $9 a batch, homemade taquitos are a great dinner that will be requested again and again.

Ingredients
- 2 Boneless Skinless Chicken Breast about 1.5 lbs
- 1 tablespoon Tomato Paste
- 1 4 oz can Diced Jalapeños
- 2 tablespoons Honey Sriracha Seasoning
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Black Pepper
- 9 slices White American cheese
- 2 oz Pepper Jack Cheese any white cheese like mozzarella, provolone, or jack work well and can be substituted
- 3 tablespoons Heavy Cream
- 8 Large Flour Tortillas
- Cooking Spray

Instructions
Cheesy Chicken Taquito Filling
- Set the oven to broil and preheat to 550F. Dice the chicken into tiny 1cm cubes and add to a frying pan over medium high heat.
- Add the tomato paste, jalapeño, honey sriracha seasoning, garlic powder, onion powder, and black pepper to the chicken. Sauté until the chicken is cooked through, reaching an internal temperature of 165F.
- Reduce the heat to low and break up both cheeses into the pan. Add the heavy cream and stir until all of the cheese is melted and everything is combined. Remove from heat.
Taquitos
- Microwave the tortillas for about 30 seconds so they are soft and pliable. Slice the tortillas like a pizza evenly into thirds.
- Starting on the curved side of the tortilla, spoon a line of taquito filling about 1/2 inch wide across the tortilla slice edge. Roll from the edge to the point, keeping the tortilla tight around the filling.
- Place filled taquito on a baking sheet and continue stuffing tortillas until all filling is used up.
- Spray taquitos with cooking spray and place in the oven to broil at 550 for 2-5 minutes or until the taquitos are golden brown and crispy. Serve and enjoy!
