Mix the ground pork and salt together, making sure the salt is evenly distributed.
Add the red pepper flakes, sage, brown sugar, black pepper, and ginger and mix well to combine. Continue to mix and knead with your hands until the meat is sticky. You should be able to grab a ball of meat in your hand and it stick to your palm.
Once the meat is well mixed and sticky cook to an internal temp of 165F and enjoy!
