Veggie Spring Rolls
  1. Soak the rice noodles according to package directions, until they are soft and ready to eat. Drain and set aside.
  2. Slice up the red bell peppers, carrots, and radishes into thin strips and set aside.
  3. Roughly chop the lettuce, cabbage, and peanuts separately and set aside.
  4. When you are ready to roll the spring rolls soak each rice paper one at a time according to package directions. Fill and roll each spring roll one at a time before you soak the next paper.
  5. Once the paper is soft and pliable blot it on a towel and then fill with red bell pepper, carrots, radishes, lettuce, cabbage, peanuts, and rice noodles. Fold the right and left sides in towards the middle and then fold the bottom up over your filling and folded sides and roll the roll the rest of the way closed.
  6. Continue steps 4-5 until you have made all of the rolls. Serve with spicy peanut sauce and enjoy!
Spicy Peanut Sauce
  1. In a medium sized bowl mix the peanut butter, soy sauce, sriracha, lime juice, sesame oil, sugar, apple cider vinegar, and water. Beat well until the peanut sauce looks smooth and well mixed. It is ok if it separates, just mix it back up before serving.
