Vegetarian Paneer Curry
Vegetarian paneer curry is an easy meatless meal that can be made in 30 minutes for less than $1 per serving! This hearty creamy dish is best served over rice.
Paneer is easy to make at home using only a gallon of milk, lemon juice, and salt. It can be substituted with firm tofu for a low maintenance substitute.
Vegetarian Paneer Curry

Ingredients
- 2 Small Yellow Onion minced
- 2 Tablespoons Minced Garlic
- 1 Tablespoon Butter
- 1 15.5 oz can Chickpeas
- 1 Tablespoon Corriander
- 1 Tablespoon Cumin
- 1 Tablespoon Turmeric
- 1 Tablespoon Cajun Seasoning
- 3 Cups Water
- 2 Tablespoons Tomato Paste
- 1 Cup Cottage Cheese
- 1 lb Paneer can substitute tofu if paneer is not availible
- 1 12 oz bag Frozen Peas and Carrots
- 2 Cups Basmati Rice
Instructions
- Cook rice according to package directions.
- Add minced onions, garlic, and butter to a pan and sauté until tender.
- Add whole can (including liquids) of chick peas, coriander, cumin, turmeric, cajun seasoning, tomato paste, and water to pan and bring to a simmer. Simmer until the chick peas are tender, about 10 minutes.
- While mixture is simmering steam peas and carrots in the bag in the microwave and cut the paneer up into 1/2 inch chunks.
- Once the chick peas are tender add the paneer, cottage cheese, and peas and carrots to the curry and stir to combine. Cook for another minute or so until the paneer is warm.
- Serve over rice and enjoy!
