Add whole can (including liquids) of chick peas, coriander, cumin, turmeric, cajun seasoning, tomato paste, and water to pan and bring to a simmer. Simmer until the chick peas are tender, about 10 minutes.
While mixture is simmering steam peas and carrots in the bag in the microwave and cut the paneer up into 1/2 inch chunks.
Once the chick peas are tender add the paneer, cottage cheese, and peas and carrots to the curry and stir to combine. Cook for another minute or so until the paneer is warm.
