This is my great grandfathers recipe for creamy cucumber salad. It’s different and refreshing with thinly sliced crisp cucumbers in a creamy dressing. The onions add a nice bite to this easy side dish for under $3.

- 3 Cucumbers Large
- 1/8 Red Onion Large
- 1/8 Teaspoon Salt
- 1/8 Teaspoon Black Pepper
- 1/8 Teaspoon Garlic Powder
- 1/4 Teaspoon Dill (optional)
- 1/4 Cup Slaw Dressing I prefer Marzetti brand

Instructions
- Peel the cucumbers and then slice them very thin. I like to use a mandolin (link in notes) to really speed up the cutting process. Place cut cucumbers in a bowl.
- Slice the onion just as thin as the cucumbers, as my grandpa says so the onion is sliced "like eyebrows," basically in thin strips. Add to the cucumbers in the bowl.
- Add the salt, black pepper, garlic, dill, and slaw dressing to the bowl. Mix well to combine. Serve and enjoy!

Water will be expelled from the cucumbers the longer this sits, resulting in a more runny dressing.
This is my favorite (the brand I use) mandolin because it is so EASY to clean. I have tried other brands and the two others I tried did not come apart easily and had crevices where food gets stuck.
