For under $5 this creamy quinoa chowder is a delicious meal for a busy night. It only takes about 20 minutes total to make, and is a savory crowd pleaser!
Since I came up with this recipe when trying to use up all of the random things in my fridge/pantry before we moved, add whatever vegetables you have on hand or need to use up! Here is a good homemade Cajun Seasoning recipe, salt free!

Creamy Quinoa Chowder
Creamy, flavorful, hearty chowder that is super quick!
Instructions
Dump the quinoa, cream of chicken soup, milk, and water into a pot over high heat. Mix until the soup is fully dissolved and bring to a boil.
While the pot is heating, cut up the zucchini and garlic and add them along with the pepper and 1/4 teaspoon cajun seasoning to the pot.
Once it comes to a boil reduce heat to low and simmer covered for 15 minutes, or until the quinoa is soft and done.
Cut up the chicken breast into 1/2 inch cubes, sprinkle with 1/4 teaspoon cajun seasoning and pan fry until chicken is cooked through. Add to pot once cooked. Mix everything together and enjoy!
