  1. Preheat the oven according to puff pastry package directions (I used 400F for convection oven). Roll out the puff pastry on a sheet of parchment paper.
  2. Slice pastry into squares your desired size (I usually get 25-30 out of my sheet of pastry as I like smaller pastelitos).
  3. Taking one square at a time stretch the pastry until it is about a 2″x2″ square. Slice 1/4″ thick slice of cream cheese from the short end of the block and cut it in half so you have an approximately 1″ square. Cut a slice of guava paste about the same size and place them onto your pastry dough.
  4. Fold the dough in half like a triangle and pinch the edges together. Use a fork to make sure the dough is sealed. Repeat until all pastries are filled.
  5. Brush the tops of the pastries with the egg and bake according to pastry directions, about 20-30 minutes or until golden brown.

These pastries are also good with either just cream cheese or just guava paste. I love all of them! If making different kinds fold them into different shapes (like squares vs triangles) to easily tell them apart.
