This simple homemade breakfast sausage recipe is great for people worried about what ingredients are in their sausage! It’s fresh, easy and delicious! The recipe is cheaper if you can grind your own pork, but if you’d rather not, or don’t have a meat grinder, you can buy pork already ground to make your own sausage!
If you want to grind your own meat, a stand mixer attachment like this works great! Just make sure that your meat is super cold (almost frozen) before grinding.
I like to use this sausage in breakfast tacos and homemade sausage gravy!

- 2 lbs Pork Butt Ground
- 2 teaspoons Salt
- 1/2 teaspoon Red Pepper Flakes
- 2 tablespoons Sage
- 1 teaspoon Brown Sugar
- 1.5 teaspoons Black Pepper
- 2 tablespoons Ground Ginger

Instructions
- Mix the ground pork and salt together, making sure the salt is evenly distributed.
- Add the red pepper flakes, sage, brown sugar, black pepper, and ginger and mix well to combine. Continue to mix and knead with your hands until the meat is sticky. You should be able to grab a ball of meat in your hand and it stick to your palm.
- Once the meat is well mixed and sticky cook to an internal temp of 165F and enjoy!
