  1. Cut up the pork butt into small chunks, removing the bones. Grind to 1/4″ and place in a bowl. (If you bought ground pork skip to step 2)
  2. Add the salt and mix together. Then add the rest of the seasonings and mix well. Let sit overnight for better protein extraction and more moisture retention in your sausage.
  3. Form into patties or cook ground meat, breaking it into little chunks like I did and enjoy!
