This homemade spicy chorizo sausage recipe is less than $2 per pound. It is packed full of flavor and by making it at home, you control your spice and salt levels!

I got to take a meat science class while getting my masters and since then sausage making has fascinated me. Since we love spicy sausage this chorizo recipe is easy to make at home!

Whenever I make sausage at home I like to buy a full pork butt when they are on sale (which are usually about 15 lbs), grind it all up, and freeze most of it so I always have ground pork on hand to make sausage.

I use this homemade Chorizo sausage to make this queso fundido dip!

I have a grinder attachment for my stand mixer that I use to grind meat. It’s a whole lot cheaper to grind it yourself, rather than buy it already ground. You just have to make sure the meat is REALLY COLD or it will be super hard to grind and will gum up the grinder. I like to put my chopped up meat in the freezer for a while before I grind it to make everything easier.

Instructions
  1. Cut up the pork butt into small chunks, removing the bones. Grind to 1/4" and place in a bowl. (If you bought ground pork skip to step 2)
  2. Add the salt and mix together. Then add the rest of the seasonings and mix well. Let sit overnight for better protein extraction and more moisture retention in your sausage.
  3. Form into patties or cook ground meat, breaking it into little chunks like I did and enjoy!
