If you’re making the pie crust from scratch do that first. If using a store bought crust start at step 2.
Whip the cream cheese with a hand or stand mixer. Once it is soft, add in the sweetened condensed milk and blend together until smooth.
Add in the key lime juice, starting with only 1/2 cup. Continue to add more, tasting as you go, until the pie has enough key lime flavor.
Pour into the pie crust and refrigerate for at least an hour until the pie is set. Serve with whipped cream and enjoy!
Graham Cracker Crust
Melt the butter in the microwave, heating 30 seconds at a time until fully melted.
Pour melted butter over the graham cracker crumbs and mix to combine. Press into a pie pan, or cupcake pan for mini pies, and bake at 350 for 10 minutes.
