I prefer the honey or champagne mangoes. They’re sweeter and I think it’s easier to tell when they’re ripe.

Roasted Red Peppers
Diced

Small Red Onion
Minced

Lime Juice

Cayenne Pepper
Add more for a spicer salsa!
Instructions
Chop up the mangoes and roasted red peppers and mix them together.
Mince the onion and chop the cilantro and add them along with the lime juice and Cayenne to a bowl. Mix them all together and enjoy with chips!
