- 1 lb Ground Chicken Thighs and drumsticks work best
- 1 Teaspoon Salt
- 4 Tablepsoons Butter half a stick
- 1 Teaspoon Cayenne Pepper Add less for a milder spice
- 2 Teaspoons Paprika
- 1 Teaspoon Black Pepper
- 1 Teaspoon Brown Sugar
- 1 Teaspoon Garlic Powder

Nashville Hot Chicken Sausage
- Make a batch of buttermilk biscuits (recipe at the link above). Once you get them in the oven start on the hot chicken sausage.
- Grind up your chicken thighs/legs to 1/4" making sure the mear is really cold before you grind. If buying ground chicken start with the next step.
- Add the salt and mix well to combine.
- Melt the butter in a small bowl and add the cayenne pepper (use less for less spicy patties), paprika, black pepper, brown sugar, and garlic powder. Mix well until you have an evenly mixed sauce.
- Pour this into the chicken and mix well to combine. For maximum flavor and moisture retention let sit overnight before cooking. They will still come out well if you cook right away, but might have more fat come out in the pan.
- Shape into small 2oz sliders and pan fry until fully cooked with an internal temperature of 165F.
Hot Honey Sauce
- Mix the honey and sriracha in a small bowl. Pour onto biscuit and patty to serve.
- Break biscuits in half, pour hot honey sauce on, and add a hot chicken patty. Garnish with pickles if desired.
