As the chorizo is cooking, prep the tortillas and eggs. For each burrito, scramble 2 eggs + 1 tablespoon of milk in a cup or bowl, beating together well. (These directions are for making individual egg circles for each burrito like in the picture. If you’re cooking for a crowd skip this and just scramble all of the eggs at once, portioning them onto each burrito.) Heat the tortillas for about 20 seconds in the microwave to soften.
