This is another of my husband’s recipes that I love! These sweet and spicy breakfast burritos are made with chorizo for spice and my favorite sweet chili sauce for an exciting Asian twist on Mexican breakfast burritos. At only $3 for breakfast for two, this breakfast is a popular one! It’s also our go to camping breakfast, easy to make over a fire.

Sweet and Spicy Breakfast Burrito
Instructions
  1. Cook the chorizo in a large frying pan over medium-high heat, crumbling it as it cooks.
  2. As the chorizo is cooking, prep the tortillas and eggs. For each burrito, scramble 2 eggs + 1 tablespoon of milk in a cup or bowl, beating together well. (These directions are for making individual egg circles for each burrito like in the picture. If you're cooking for a crowd skip this and just scramble all of the eggs at once, portioning them onto each burrito.) Heat the tortillas for about 20 seconds in the microwave to soften.
  3. Once the chorizo is done, remove from pan and set aside. use the sausage grease to cook the eggs. (If precooking the sausage, use a little butter.) Pour one burritos worth of eggs into the pan and cook, covered for about 2 minutes until the eggs are firm, flipping once the top is no longer runny.
  4. Slide the egg circle onto a warm tortilla, spoon half of the sausage on top, sprinkle with half of the cheese, and drizzle with as much mae ploy as you like. (The original way to make the burrito was to roll and then pour the mae ploy on top and eat it with a fork, but I like to eat my burritos with my hands.) Roll the burrito and enjoy! Repeat for each burrito.
