Who doesn’t love tacos? This is an easy breakfast that is packed full of flavor! The chorizo will add just the right amount of spice to your eggs.

Ingredients
- 1 lb Chorizo
- 6 Eggs
- 3 Tablespoons Milk Optional for creamier eggs
- 1 Teaspoon Black Pepper
- 1 Cup Shredded Cheddar Cheese Mexican blend or Colby jack cheese are also good on these
- 8 Small Corn Tortillas can substitute flour if preferred
- 1 Tablespoon Hot Sauce or Hot Peppers Optional for garnish/added spice

Instructions
- Cook the chorizo in a frying pan on medium-high heat, breaking up into crumbles as it cooks with your spatula.
- While the chorizo is cooking combine your eggs, milk, and black pepper in a mixing bowl and scramble the eggs. Remove the cooked chorizo from the pan, leaving about 2 tablespoons of the grease behind to cook the eggs in.
- Pour the eggs into the dirty pan and scramble, cook until eggs are no longer runny.
- While eggs are cooking cover tortillas with a wet paper towel and microwave for 20-30 seconds or until warm.
- Fill warm tortillas with chorizo, eggs, and cheese. Garnish with hot peppers or hot sauce if desired.
Recipe Notes
If I've got peppers and onions on hand at home I will also pan fry 1/2 a pepper and 1/4 an onion, both chopped into pieces, and add those to the tacos as well, however that was not added to the tacos pictured.
