This magical Chorizo Queso Fundido dip will be the hit of your Super bowl party this year. If you’ve got a lot of people coming you might want to make a double batch because it will be gone quickly.

  1. In an oven safe frying pan (cast iron is great for this) cook the chorizo, breaking up into crumbles with a spatula as it cooks, about 5 minutes. Preheat the oven to 400F.
  2. While the chorizo is cooking chop the onion into tiny pieces and open all of your cans. Once the chorizo is done remove from pan, leaving behind as much grease as possible.
  3. Add the garlic to the grease and cook on medium high heat for about 30 seconds. Add the onions and cook until translucent, about 5 minutes.
  4. Add the green chilis and cook for another minute or two, until the moisture is reduced a little. Remove from pan.
  5. Pour the beer and the flour into a mason jar or Tupperware with a lid that will not leak. Shake until all of the flour is dissolved in the beer. You will have to release pressure every couple of shakes because the beer is bubbly! This will keep the flour from clumping when added to the pan.
  6. Once the flour is dissolved pour the flour and beer mixture in the pan on medium heat. Stir until the mixture begins to thicken, then add all three cheeses, stirring constantly. Once the cheese begins to melt add the beans, chorizo, and the pepper and onion mixture to the pan, mixing to combine.
  7. Place the pan of dip into the preheated oven at 400F and bake for about 5 minutes, until the cheese is hot and bubbly. Optional: Garnish with tomato and green onions. Serve with chips.
