Cheesy Chicken Quesadilla
Instructions
  1. In a large frying pan sauté the peppers and onions with half of the butter until slightly soft. Remove from pan and set aside. If the chicken is not already cooked dice and cook it now.
  2. Assemble the quesadilla on a dish, layering the ingredients on half of the tortilla. First put a layer of cheese on the bottom, then the peppers and onions and chicken mixed together, then squeeze some mayo over this layer, and cover everything with another layer of cheese.
  3. Fold the empty half of the tortilla over the full half and press closed. Do the same for the second tortilla.
  4. Melt the rest of butter in the pan on medium to medium-high heat and add the quesadillas. Cook until the bottom is golden brown (2-5 minutes or so) and then flip. The second side will not take as long to brown as the first.
  5. Cut into wedges and serve and enjoy!
