  1. Place the 2 cups of rice and 4 cups of water in a pot with a lid. Bring to a boil, lower the heat to low and cook covered for 20 minutes. While the rice is cooking start the beans.
  2. Fry the chorizo in a large pot, crumbling it into pieces as it cooks.
  3. While the chorizo is cooking chop the onion into tiny pieces. Add the onions and garlic to the sausage and cook until the sausage is fully cooked and the onions are translucent.
  4. Chop the roasted red peppers while the onions are cooking. Add the garlic powder, cajun seasoning, roasted red peppers, green chilis, and jalapeƱos. Mix and continue cooking over medium heat.
  5. Add the beans and tomatoes and mix well. Bring to a boil and simmer for at least 15 minutes. The longer the beans cook with everything else, the better they will taste.
  6. Just before serving slice up the sausage and pan fry to brown on both sides. Add to the red beans and enjoy!
Recipe Notes

This recipe just tastes better the longer it sits. If you can, make it ahead and reheat the beans for more flavor!
