This homemade kielbasa recipe is a delicious uncured version that you can make at home for under $2 per pound! We have been enjoying making different types of sausage at home, and since my Grandpa is Polish we made this one for him!

Here is a link to hog casings, and one to the sausage stuffer attachment I use.

This would be good in these Sausage and Pepper Hoagies.

Instructions
  1. Soak your hog casings according to package directions to desalt if necessary.
  2. In a large bowl combine the ground pork along with the garlic, salt, black pepper, and oregano. Mix well, until the meat mixture is sticky and when grabbed sticks to your hand.
  3. Stuff into pre-soaked hog casing sing a sausage stuffer, making links as long as you would like. (I did about 4 inch links.)

These casings will work, but there are many options depending on what size sausage you'd like.
