- 2 Boneless Skinless Chicken Breast about 1 lb
- 2 Tablespoons Coconut Oil
- 1/2 Cup Pancake Mix
- 6 Tablespoons Water
- 3 Tablespoons Minced Garlic
- 1/2 Cup Honey
- 2 Tablespoons White Vinegar

Instructions
- Place the pancake mix into a large ziplock bag. Cut up the chicken breasts into 3/4 inch cubes and add them to the bag. Shake well, until the chicken is all evenly coated with pancake mix.
- Place the coconut oil into a frying pan over medium high heat with a lid to melt. Add the chicken to the pan, leaving any remaining pancake mix in the bag.
- Stir the chicken to coat with the oil and cook for about 5 minutes, adding the water after about a minute. Cook until the internal temperature of the chicken reaches 165F. Move the chicken over to the side of the pan.
- On the empty side of the pan add the garlic and cook until it starts to brown slightly.
- Add the honey to the garlic and cook until the honey melts and starts to bubble. Add the white vinegar and stir the sauce together.
- Mix the sauce into the chicken and cook for 2-3 minutes or until the sauce starts to thicken and caramelize.
