Honey Garlic Chicken
Instructions
  1. Place the pancake mix into a large ziplock bag. Cut up the chicken breasts into 3/4 inch cubes and add them to the bag. Shake well, until the chicken is all evenly coated with pancake mix.
  2. Place the coconut oil into a frying pan over medium high heat with a lid to melt. Add the chicken to the pan, leaving any remaining pancake mix in the bag.
  3. Stir the chicken to coat with the oil and cook for about 5 minutes, adding the water after about a minute. Cook until the internal temperature of the chicken reaches 165F. Move the chicken over to the side of the pan.
  4. On the empty side of the pan add the garlic and cook until it starts to brown slightly.
  5. Add the honey to the garlic and cook until the honey melts and starts to bubble. Add the white vinegar and stir the sauce together.
  6. Mix the sauce into the chicken and cook for 2-3 minutes or until the sauce starts to thicken and caramelize.
