Cauliflower fried rice is a good way to load up on veggies. For just $5.50 this is a great main dish or paired with honey garlic chicken for the meat lovers in your life. I like to make a huge batch and eat it for lunch during the week.
This also goes well with pork dumplings!

Ingredients
- 1 Small Yellow Onion diced
- 2 Tabespoons Minced Garlic
- 1 Large Cauliflower shredded
- 1 teaspoon Onion Powder
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Black Pepper
- 4 Tablespoons Soy Sauce Add more for a saltier flavor
- 1 20 oz bag Stir Fry Vegetables frozen, usually they have combinations like broccoli, peppers, green beans and other stir fry vegetables. Pick your favorite!
- 2-3 Eggs if you like more eggs do 3, if not use 2
- 1 Tablespoon Milk

Instructions
- Add the diced onion and minced garlic to a large frying pan. Cook over medium heat until translucent (about 3-5 minutes).
- As the onions and garlic are cooking, shred the cauliflower. Add it to the pan along with the onion powder, garlic powder, and black pepper and cook until the cauliflower smell goes away and the cauliflower is soft (about 5-10 minutes).
- Add the soy sauce and stir fry vegetables and continue cooking until they are thawed and heated through.
- In a separate bowl or cup whisk the eggs and milk together. Create a hole in the center of the frying pan about 3 inches across, moving all of the vegetables aside. Pour the eggs in to cook over medium high heat, stirring to scramble the eggs.
- Once the eggs are cooked through mix all of the vegetables and eggs together, adding more soy sauce to taste. Serve and enjoy!

Cauliflower can also be bought riced in the frozen section and sometimes fresh in some grocery stores. This can be a good timesaver if you'd rather buy it already shredded.
