I recently tried macarons for the first time and I fell in love, however they were $2.50 per cookie and I thought that was just crazy! For only $0.85 per recipe (which is about 20 cookies) you can make these cookies and cream macarons at home!

It took me a couple tries to figure out what consistency a meringue was supposed to have and how to cook the cookies so they didn’t crack, have air in them, or otherwise look ugly. Martha Stewart has a great video that might help here!

Meringue
  1. Preheat oven to 320F. Separate two eggs and place the whites in the bowl of a stand mixer with the whisk attachment. Add the granulated sugar and begin to mix on low speed.
  2. Mix for 2 minutes at each speed setting, increasing the speed by one after each 2 minutes. Once at max speed continue to mix until stiff peaks form. The mixture should be super thick.
  3. Add food coloring if using and mix to combine.
Filling
  1. For the filling whip the butter together with the Oreo fillings until you have a smooth paste.
  2. Once the cookies are cool match sets of 2 cookies together that are the same size. Place a dollop of frosting on one of the cookies and gently push the matched cookie on top making a cookie sandwich.
  3. Repeat until all cookies are filled and enjoy!
