I like to have this meal prep cooked chicken on hand for meals though out the week. I use it every day for lunch and sometimes for dinners too. Usually I’ll try to make enough to last for 2 weeks at a time. For only $2 per pound this is a great base for cheap lunches!

- 4 lbs Boneless Skinless Chicken Breast
- 2 Teaspoons Cajun Seasoning
- 2 Teaspoons Black Pepper
- 2 Teaspoons Paprika

Instructions
- Cut up the chicken breast into 1 inch cubes.
- Sprinkle seasoning on top and mix together well.
- For oven cooking, spread the seasoned chicken on a cookie sheet and bake at 400F for 20 minutes or until the internal temperature of the chicken reaches 165F.
- For air fryer cooking cook at 360F for 15-20 minutes. Refrigerate for use in meals throughout the week.
