This Red Beans and Rice recipe is packed with Cajun flavor for just $2.33 per serving. It freezes really well, so I like to make a giant batch and freeze meal sized servings. Then I can heat them up quickly on busy nights.

Ingredients
- 1 lb Chorizo
- 2 Yellow or Sweet Onions
- 3 Tablespoons Minced Garlic
- 1 12 oz bottle Roasted Red Peppers chopped
- 2 4 oz cans Diced Green Chilis
- 1 4 oz can Diced Jalapeños
- 1 14.5 oz can Diced Tomatoes
- 3 15.5 oz cans Pink Beans
- 1 Teaspoon Garlic Powder
- 2 Teaspoons Cajun Seasoning add more for more salty spice
- 2 Cups Rice + water to cook rice
- 1 9 oz package Smoked Sausage sliced into 1-2cm slices

Instructions
- Place the 2 cups of rice and 4 cups of water in a pot with a lid. Bring to a boil, lower the heat to low and cook covered for 20 minutes. While the rice is cooking start the beans.
- Fry the chorizo in a large pot, crumbling it into pieces as it cooks.
- While the chorizo is cooking chop the onion into tiny pieces. Add the onions and garlic to the sausage and cook until the sausage is fully cooked and the onions are translucent.
- Chop the roasted red peppers while the onions are cooking. Add the garlic powder, cajun seasoning, roasted red peppers, green chilis, and jalapeños. Mix and continue cooking over medium heat.
- Add the beans and tomatoes and mix well. Bring to a boil and simmer for at least 15 minutes. The longer the beans cook with everything else, the better they will taste.
- Just before serving slice up the sausage and pan fry to brown on both sides. Add to the red beans and enjoy!

This recipe just tastes better the longer it sits. If you can, make it ahead and reheat the beans for more flavor!
